Chocolate Tortoise Truffles

  • 8 ounces dark chocolate, finely chopped
  • 1/2 cup heavy cream
  • 2 tablespoons unsalted butter
  • Cocoa powder, for dusting
  1. In a saucepan, heat the heavy cream and butter over medium heat until it simmers. Remove from heat.
  2. Place the finely chopped dark chocolate in a heatproof bowl. Pour the hot cream mixture over the chocolate and let it sit for a minute to melt.
  3. Stir the chocolate and cream together until smooth and well combined. The mixture should be thick and glossy.
  4. Cover the bowl and refrigerate the mixture for at least 2 hours, or until firm.
  5. Once the mixture has chilled and firmed up, use a small spoon or melon baller to scoop out portions of the chocolate mixture.
  6. Roll each portion into a small ball between your palms to create truffles.
  7. Roll the truffles in cocoa powder, or if desired, roll them in your choice of chopped nuts, shredded coconut, or sprinkles for added texture and decoration.
  8. Place the finished truffles on a baking sheet lined with parchment paper and refrigerate for another 30 minutes to set.

Your attention to detail is amazing and I loved how you added a section about their conservation, how you showed their role in their ecosystem and talked about the folklore surrounding them.
