The Brillish Cheese Caves

An unusual refuge

  The town of Keld on the northern coast of the island of Bril is known for its cheese, called keldsir. The inhabitants of the town expanded natural sea caves to make a wide, safe place to store and age this cheese, which remains there to mature for around two years. The caves are difficult to get to, and the safest ways to traverse the cliffs are a well kept secret amongst locals. Keldsir is a naturally salty, strong cheese made from sheep milk.   During the recent bloody civil war that followed the island's independence from Serukis, the cheese caves were used as a shelter against the widespread violence. The whole town retreated to the caves for several months during the worst of the fighting.   The cheese caves are around seven hundred years old, though there is evidence that the natural sea caves had been used for hundreds of years prior to that for different purposes, such as smuggling. Some of the shelves that the cheese wheels are stored are made from the remains of shipwrecks that littered Bril's craggy coastline.
