Mostly human, with some Fennodi and some cactus people
Defences
The wine cellars of the old winery are well reinforced to withstand all but the mightiest sieges. The townsfolk otherwise have a smattering of contemporary weapons.
Industry & Trade
The town has built up a lively trade in wine, trading it to the Apache for miscellaneous goods and protection. The Apache then trade it to the Pecos Bandits and the Coalition States for a sizable markup. It is a good arrangement for everyone. Their wine has even become a regular item in Dark Cherry's Traveling Market (though they aren't aware of that).
History
After the great cataclysm, some survivors came upon an abandoned winery in the middle of the desert hills of what was once Eastern Arizona or Western New Mexico. The underground cellars served as a good safe place to go in the case of emergencies and also a safe place to keep their foods and supplies, so they settled down here. They named the place Colibri because that's that was on the wine bottles they found.
Two years ago, just over a dozen people, fleeing the Red Queen Colony joined the settlement. They were a welcome addition as they were all skilled in useful trades and well educated.

Nothing remains of the original winery buildings.

Natural Resources
Many of the original grape vines have survived to this day and although the grapes are too small and tart to be eaten, they are perfect for turning into wine.
