Afilada Cheese
Those who say that this is merely another variety of sharp cheese clearly have never tried Afilada. The sharp flavor of this Avistarian variety of cheese cannot be captured with words.Avistar was the birthplace of several kinds of cheeses, but the notoriety of Afilada rivals the rest. Its flavor is more complex that other kinds of hard cheeses which has made it the cheese of choice in many Avistarian homes. It is commonly served with bread, or potatoes. Grapes, nuts, and apples pair well with this cheese, and wine is another good pairing. Afilada can also be enjoyed with other cheeses including brie and gouda.
Secret Makings
Afilada is said to require as much as two years of aging to develop its proper flavor and texture. The exact recipe for the ripening agent for this aging process is a well-kept secret. Avistarian cheese-makers are notorious for introducing special ingredients, imagined or not, and then guarding these ingredients almost jealously. As a result, one kind of cheese can have several slightly different variations. Some of these variations are lost when the cheese-maker passes on. Those that survive are entrusted to heirs or some other trusted person. In some cases, those entrusted to preserve the knowledge of how to make a cheese sell it to a guild for profit. The Mabara Guild is known to have purchased and now guards the makings of several rare kinds of cheeses.
