You can increase their Strength by +1 and Constitution +1.   Size: Minotaurs are Medium creatures.   Speed: Your base walking speed is 30 feet.   Darkvision: Minotaurs can see in dim light within 60 feet of themselves as if it were bright light, and in darkness as if it were dim light. They can't discern color in darkness, only shades of gray.   Horns: Minotaurs have powerful horns that they can use in combat. You have a natural weapon attack with your horns, which you can use to make unarmed strikes. Your horns deal 1d6 piercing damage.   Labyrinthine Recall: Minotaurs are skilled at navigating complex environments. You can perfectly recall any path you have traveled.   Languages: Common and Kothian   Age: Reaches adulthood at 17, to about 150 years.

You gain +1 Wisdom.   Nature's Resilience: You have advantage on saving throws against poison, and you have resistance to poison damage.   Natural Explorer: You are proficient in the Survival skill.
Subrace: Mountain Minotaur:   Ability Score Increase: Mountain Minotaurs are hardy and well-suited to the high altitudes. You gain +1 Constitution.   Mountain Born: You have resistance to cold damage and are acclimated to high altitudes.   Rock Climber: You have proficiency in the Athletics skill.
Subrace: Desert Minotaur:   Ability Score Increase: Desert Minotaurs have a deep connection to the harsh desert environment. You gain +1 Wisdom. Their horns deal Bludgeoning instead of piercing.   Desert Survivor: You are resistant to heat and have advantage on saving throws against heat-related effects. You can also go longer without water than most creatures.   Sand Walker: You have proficiency in the Survival skill.
