Strugatovkan Ragout

Ingredients:

• 2 large beetroots, peeled and grated
• 1 large onion, finely chopped
• 2 medium carrots, peeled and grated
• 2 medium potatoes, diced
• 1 cup cabbage, shredded
• 4 big diced tomatoes
• 4 cups vegetable or beef broth
• 2 cloves garlic, minced
• 2 tablespoons olive oil
• 2 tablespoons vinegar
• 1 bay leaf
• 1 teaspoon sugar
• Salt and pepper
• Sour cream and fresh dill for garnish

Instructions:

In a large pot, sauté the onions and garlic in olive oil until translucent. Add grated beetroots and carrots, and cook for about 5 minutes until slightly softened. Stir in diced tomatoes, potatoes, cabbage, and bay leaf. Pour in the broth, and bring to a boil. Reduce heat to low and let it simmer for about 30 minutes until vegetables are tender.
