Tepache

Brewed from pineapple and other tropical fruits, this alcohol is popular in the warm coastal regions.

Manufacturing process

Local Pineapple and tropical fruits are mashed, and mixed with equal volumes of warm water.
This mash is allowed to rest for 1 day, it is then strained and placed in clay pots and capped with wax.
After resting in a cool place for 2 additional days it is uncapped and ready to drink. Each additional day after the third increases the alcohol content slightly, but slowly decreases the flavor. After 10 days the liquid spoils completely and will mold.
