Piirakka

Appendix 4: Preparing to Make Piirakka

  A piirakka is fundamentally like a Rothilimion meat pie, in that it has a crust made from dough and one of a variety of fillings. The differences are greater than the similarities however. Piirakka dough is made from the body of a large, white root vegetable (called peruna). The peruna are cultivated by the lizardfolk of Hyvamaa in garden plots between the villages and the forest. The roots are harvested from the ground, washed in the lake, then beaten with mallets (often by the children) to make a doughy paste. When cooked, it forms a crust around the filling.   The peruna is layered around handfuls of filling. While the pies could contain almost anything edible (and for lizardfolk, that covers much ground), there are several fillings that I observed being commonly used.

  The people of Hyvamaa appreciate bright colors in their food as well as their clothing, furnishings, and architecture. They include various meats (from the forest, from the lake, and occasionally from tribal funerals), vegetables, fruits, and especially peppers, not only for their flavor, but for the mix of colors in the pie. This can lead to some astonishing combinations of flavors for those who are not prepared.   The piiraka are typically baked in clay ovens. For festivals or large gatherings, they will dig great fire pits along the shore of the lake. When the fire has burned down, they will bury armloads of piirakka under the sand and leave them to bake until it is time to feast. (As noted in one interview with a local resident, the feasting can last many days.)
