Jazuts jo Kumb (ʤaˈzuʦ ʤo kuˈᵐb)

Jazuts jo Kumb is a dish unique to Aldabran Cuisine.  

Preparation

  The meat is rubbed heavily with salt gathered from Gendo's best-known salt flat, the Limla Pang. The salt's unique composition imparts a bright, minerally taste to the dish. Once applied, the meat is allowed to dry-age overnight.   The next morning, the meat is cut into large cubes and coated with an aromatic mixture of oregano, sage, and thyme. It is wrapped in the edible leaves of the Calwiewhist plant. This plant is heavily used in Aldabran cuisine. It is renowned for the buttery flavor it imparts to dishes from the high levels of lactic acid in the leaves, and this dish is no exception.   The wrapped meat is then buried two feet in the sand where the desert heat slowly cooks it over the day. By evening, the succulent, tender meat is retrieved and served on the leaves with a side of Wa Dzucho for dipping. Every Aldabran eats at least a bite of the dish, even down to small children just learning to eat solid food. The entire tribe gathers to eat the meat at the same time.  

Cultural Significance

  The ritual surrounding the dish is as equally important as the nutrition it provides. It is an acknowledgment of a sapien's payment of their debt to Aldabran society. It is a payment made by sapiens who have committed grievous crimes against them. They are required to undergo the Trial by Kinkajou. The few that survive are revered. They make their payment through a lifetime of service to the tribe that will, in turn, care for them till their death. Those that die make their payment by being the dish's main ingredient.
