Manufacturing process
Echirt sour apples are mashed and thrown in the bottom of a copper cauldron still. Yeast and water are thrown in along with the secret ingredient. A thin tube is attached to an alembic which gathers the alcohol as it gradually separates from the mixture through the fermentation process and is then drained into a separate jug with the juice from the mash.
Significance
The town of Echirt is primarily known for this as their one and only export.
