Bugoh

A stuffed flatbread/rolled pancake filled with minced meat, scrambled eggs, mashed beans, grilled vegetables, or fish, mixed with fresh herbs. Once filled and folded, the bugoh is oiled with bu'ej-qaz - butter spiced with onions, garlic, ginger, cinnamon, cloves, cardamom, and fenugreek - and cooked on a large iron griddle until golden-brown on both sides. It is cut into squares and eaten by hand.   The flatbread is made from wheatflour and water, and cooked on a griddle. It is the same rescipe as the traditional Majdasiri flatbread, žast, but made much thinner - less than one quarter of the normal height - hence the name 'yožast' (thin bread). They are quick to cook and can be made in large batches. It is important that the yožast are wide and very thin so they fold easily and cook quickly, and the bu'ej-qaz can crisp the bread. Some vendors will advertise 'glass' žast, which are thin enough that they become translucent with the application of bu'ej-qaz.   Originally a traditional streetfood from the large market of Budesk, Kharbrand, bugoh has been exported to the Theolisian peninsula by traders and pilgrims. Although best freshly made and served hot, premade bugoh are widely available at trading stops and coaching inns, for the convenience of travellers.   Although žast is a staple food which is often homemade and features in many traditional dishes, the difficulty in making the dough pliable enough to be stretched into yožast means that bugoh are not commonly made at home.  

Regional variations

Every region has a traditional filling, according to what is most accessible. Major trade cities boast more richly spiced fillings, cities by the coast include more fish and seaweed, while the mountain variants tend to be heavier on meat.   A variant of bugoh popular in Helia is called čolbe'-bugoh. Associated with the festival of Sābrord, they are stuffed with some combination of chopped dried fruit, honey, condensed milk, and/or crushed nuts, and the yožast is oiled with a sweet variant of bu'ej-qaz, which omits the onions and garlic, and served with sweetened whipped cream.
