Humans have a very proactive view on healing. If they are to rush to the frontline to mend the wounds of their comrades in arm, then having them run around is robes is just not good enough. The guardian plate was designed specifically to keep healers as safe as possible. This massive set of armor has many overlapping sets of plate that works almost like extra shields, offering many layers of protection. It can even stand up to explosives through a combination of clever craftsmanship and magical wards, the latter of which are empowered whenever the wearer is protecting their ally. The iconography on it also helps allies discern the medic from armored frontline troops, which is important during the thick of battle.
On the downside, the ensemble is incredibly heavy and hard to wear. By necessity, human battle medics are strong and tough, even only to be able to wear their protection in battle.
