Eel

Eel are famously resistant to taking on some of the foul accretions of the canals and the sea, and they are easy to trap. Their consistency is not fabulous, and the incautious cook risks losing a finger to an ill-tempered bite, but the eels have a lot of meat on them and there are many ways to prepare it. ^{[1]: 246}
