Distillers are specialized brewers or sometimes apothecaries.

They are the ones who produce tinctures, solutions and all the other products that need to be in high alcoholic solutions or preservatives. And yes, that includes high alcohol beverages. They provide Alchemists with obscure preserved ingredients, Medics and Potioners with herbal essences and of course the common folk with highly alcoholic drinks.
