Snik Snak's Recipe Notes (Healy Mushroom Bread Experiment)

2 1/4 cups Warm Water
2 tablespoons Sugar
1 tablespoon Yeast
3/4 tablespoon Salt
2 tablespoons Vegetable Oil (Olive preferred)
5 1/2 - 6 cups Bread Flour
1 cup Shredded Mozzarella
4 ounces diced Healing Mushrooms soaked in brandy overnight
2 tablespoons shredded Parmesan Cheese
 
1. Combine water, sugar and yeast. Let bubble and foam.
2. Add salt, oil and half of flour to mix. Add remaining flour gradually until it forms a soft ball that doesn't leave residue on the hands.
3. Knead until dough is smooth.
4. Transfer to greased bowl and cover with tower. Allow to double in size.
5. Divide in half and roll out dough into two rectangles, pressing out any air bubbles.
6. Spread cheeses and mushroom evenly over each rectangle then roll into loafs, pinching off the sides to keep ingredients inside the bread.
7. Cover again with tower and allow to double in size again.
8. Bake at 190 C for 25-30 minutes or until bread is golden and baked through.
