Tough Leather. Your hide is naturally thick, deflecting weak blows. While you are not wearing any armor, you may add +1 to your AC. You can use a shield and still gain this benefit.   Labyrinthine Memory. Because of your years spent in winding caves, you can perfectly recall any path that you have traveled through any space comprised mainly of corridors and small rooms.

Chianina

Ability Score Increase. Your Strength score increases by 1.   Titan's Build. You are proficient in the Althetics skill, and you count as one size larger when determining your carrying capacity and the weight you can push, drag, or lift.   Alternatively, if your DM allows it, you may instead consider your size as Large instead of Medium. Discuss with your group and DM the specific ramifications of this beforehand.   Healthy Bulk. Your body is much heavier and massive than the average for your size class, providing you ample stamina in battle. Your hit point maximum increases by 1, and it increases by 1 more every time you gain a level.  

Dexter

Ability Score Increase. Your Dexterity score increases by 1.   Micro Stature. Your size is Small instead of Medium. You can still handle Heavy weapons.   Stout Bump. Once per round, after you successfully melee attack a creature, you may make a free attempt with advantage to shove the target if its size is Medium or smaller.  

Highland

Ability Score Increase. Your Wisdom score increases by 1.   Age: A Highlander Maze Minotaur's natural fortitude lets it live longer than other subraces, sometimes up to 150 years old.   Natural Connection. You have the ability to communicate in a limited manner with Beasts, Plants, and vegetation. They can understand the meaning of your words, though you have no special ability to understand them in return. You gain expertise in the Animal Handling skill.   Thick fur. You are naturally resistant to Cold damage. You also easily acclimate to snowy climates, even if you’ve never been to one. Additionally, you do not need a tent, bedroll or any other convenience of the like to sleep comfortably anywhere you want.  

Holstein

Ability Score Increase. Your Charisma score increases by 1.   Tool Proficiency. Milking, processing milk and turning it into many beverages or meals is a important part of your culture. You gain proficiency with the brewer's supplies.   Bountiful Harvest. You can cast the Create or Destroy Water spell, using only the spell's "Create Water" option. It may only be cast in a range adjacent to you, and the spell's level may be up to your level divided by 4 (rounded down). When you reach the 5th level, you can cast Create Food and Water. Once you cast either one of these spells, you must finish a long rest before you can use this ability again.  

Longhorn

Ability Score Increase. Your Intelligence score increases by 1.   Keeper of the Scrolls. Longhorns are highly regarded among Minotaurkind, and often appointed as History-Keepers from a young age. You gain proficiency in the History skill.   Oversized Horns. You can use your head and horns to make unarmed strikes. When you hit with them, the strike deals 1d4 + your Strength modifier piercing damage, instead of the bludgeoning damage normal for an unarmed strike. If the target is no more than one size larger than you, it is pushed back 10 feet away from you on a successful hit. This unarmed strike can be used as a reaction if a creature enters your melee range after moving at least 15 feet and did not disengage.
