Acorn Butter

Acorn butter is a versatile paste that can be used as a spread on bread, fruits and vegetables or as an ingredient for baking, salad dressings or sauces.

Manufacturing process

  1. Coarsely chop or ground the leached acorns.
  2. Add acorns and fruit juice in a 1:3 volume ratio to the cooking pot.
  3. Simmer over medium heat until the acorns softened and the juice has reduced to a syrup.
  4. Add the mixture to the mortar and pestle and process it into a thick paste.
  5. Add honey to taste.
