Acorn Butter
Acorn butter is a versatile paste that can be used as a spread on bread, fruits and vegetables or as an ingredient for baking, salad dressings or sauces.
Manufacturing process
- Coarsely chop or ground the leached acorns.
- Add acorns and fruit juice in a 1:3 volume ratio to the cooking pot.
- Simmer over medium heat until the acorns softened and the juice has reduced to a syrup.
- Add the mixture to the mortar and pestle and process it into a thick paste.
- Add honey to taste.
