Chancaca
by hughpierre
Chancaca is a warm, sweet sauce made of raw unrefined sugar; typically from various plant sources.
Mechanics & Inner Workings
Chancaca elevates the overall taste to something robust and earthy without any of the added flavours.
Solid Candy
Chancaca blocks can vary in size, shape and texture depending on the region and molds used that possess a rustic appeal.Syrup
Further refinement separates a viscous liquid from the solid sediments before solidification.Ingredient
It is also used in the preparation of other traditional sweets: marinades, meats, confectioneries and other sauces.Manufacturing process
Saturation
- Crush suitable sweet tasting plants to extract their juice
- Heat the extract in large cauldrons until most of the water evaporates, leaving behind a thick, dark brown syrup
- This syrup is then shaped into blocks to cool and solidify for storage
It is easy enough to make, but not in large quantities. Sometimes, my parents would mix the plants they boil; but the all taste the same.
Significance
Sweetener
Chancaca is commonly used to sweeten beverages; particularly for coca concoctions meant for the chosen children at the tail end of the Capacocha Ceremony. Otherwise, commoners might just eat them as a simple mid-afternoon snack; easily favoured by everyone, for quick energy.
