Dhen pud

Dhen pud is a type of sweet and tart pie and cake filling used in Kugma cuisine during special events for children during the winter. When it is especially cold, Kugma people will leave sheets of dhen pud out to freeze and then eat the frozen treat with their hands.

Manufacturing process

  1. Heat berries in a pot over a fire.
  2. Combine lab starch and water into a slurry consistency and then pour into the same pot as the berries.
  3. Cook for a couple of minutes until the mixture is thickened.
  4. Remove pot from heat and mix in shaewiblù rind and juice.
  5. Transfer mixture to a cool pot and place outside to chill.

  • lab starch powder
  • rind and juice of shaewiblù̀ fruit
