Ceviche
Ceviche, the sacred food of the Sailor, is a seafood dish made from fresh, raw fish that is marinated in lime juice and spiced with chili peppers, coriander, onions, and salt. The acidity of the lime juice denatures the protein and enzymes in the fish, effectively "cooking" it without the use of heat. This unique preparation method means it is impossible to burn while still almost achieving the taste and texture of having been cooked.
While the dish is highly prized by the city's nobility and wealthy commoners as a delicacy and its unique flavours represent the values of exploration and discovery in the Sailorite faith, ceviche (like most noble dishes) isn't actually widely enjoyed even by those who can afford it. The thrill of eating this cold fish comes from the new and unusual preparation methods. Embodying the Sailor's insatiable desire to push beyond the boundaries of what is known and safe, the risk of bacterial contamination from the raw fish represents the Sailor's willingness to explore uncharted culinary waters despite, or even because of, the danger.
