Grilled Quail in a bed of couscous
Ingredients
One whole quail
Two lemons
A clove of garlic
Three sprigs of mint
A half cup of butter
Two cups of couscous
Three cups of water
Chopped Parsley
Sea salt
Black peper
Prep
Mix a quarter cup of butter with the juices of the two lemons in a bowl, add a few pinches of chopped parsley, sea salt, and black pepper as well as the crushed clove of garlic. Zest one of the lemons into the bowl and then once all mixed together smoothly pour that over the quail. Once that is done but the meat in an oven. Leave it in there for a quarter of an hour until done. While the quail is cooking put the couscous, butter, and water in the pot, add another pinch of chopped parsley, sea salt, and black pepper to this. Keep stirring the pot until it is done. Place the couscous on the serving plate, and then the quail on top of it. Zest the second lemon over it all and add the sprigs of mint for decoration.
