Apperi

Despite its unnerving appearance, apperi is a popular street food in Suktu-populated seaside cities like Drusai. It's made of fish eyes on pointed skewers cooked over charcoal grills. It is usually consumed with a wide variety of sauces, usually spicy or sour in taste to compliment the eyes' salty flavor.

Manufacturing process

During the process of breaking down a fish, many races would discard parts like the bones, eyes, and innards, but the Suktu always save them so that they can utilize the animal to its full potential. The eyes are washed and prepared for cooking by being placed on their skewers and seasoned. (The eyes are usually aligned so they're all facing the same direction.) The skewered eyes are then grilled over a charcoal fire and occasionally flipped. The accompanying sauces are typically prepared in large batches ahead of time. Once cooked, the apperi is then sold at a cheap price and consumed.   Any fish eyes that are large enough to be placed on skewers are used. The skewers are narrow in diameter and are often made of bamboo. The dipping sauces that often accompany the skewers can be made using a variety of ingredients, most commonly vinegar, soy sauce, ginger, and/or spicy peppers.   Inns that serve apperi typically use large, permanently-set charcoal grills, but the dish is usually cooked over small, portable grills on carts that can be wheeled anywhere the vendor chooses.

Significance

The consumption of offal isn't popular among most other intelligent races, but it's considered normal among the Suktu thanks to their instinct for utilizing every part of a resource and leaving nothing to waste. Apperi is just one of several dishes that incorporate parts of an animal which are usually discarded by other races.
