Tuscan Skillet

Directions

  1. Heat olive oil until simmering in a heavy-bottomed 10-12 inch skillet over meadium heat.
  2. Add tomatoes, salt, ground pepper, and red pepper flakes.
  3. Cook until tomatoes soften and release their juices; 5-6 minutes.
  4. Stir in garlic and cook until fragrant; ~1 minute.
  5. Increase heat to medium-high
  6. Stir in tortellini and cook, stirring occasionally, until tortellini is plump and tender, ~3-5 minutes
  7. Remove skillet from heat and stir in spinach, ~1 minute
  8. Garnish with grated parmesean cheese and basil.

  • 2 tsbp olive oil
  • 2 lbs plum tomatos, coarsly chopped
  • ½ tsp salt
  • ¼ tsp ground black pepper
  • 3 cloves garlic, minced
  • 2 (8oz) packages fresh cheese tortellini or 1 (19oz) bag frozen cheese tortellini
  • 2 cups baby spinach
  • Red pepper flakes to taste (optional)
  • Pearmesan cheese, freshly grated, for serving (optional)
  • Fresh basil, for garnish (optional)
